تختلف الحلويات التركية، وتتمايز، تبعا لنوع المطبخ التركي الذي تنتمي إليه، ففي تركيا يوجد أكثر من تسعة مطابخ رئيسية، تتوزع حسب المكان الجغرافي، وحسب المدن والقرى، وحسب اختلاف ثقافتها أيضا.

وتاريخيًا أثّرت الحلويات التركية على المطابخ العربية، ولعلنا لا زلنا نستخدم أسماء معظم الحلويات التركية المشهورة أيضا في البلاد العربية، مثل القطايف، مع التحفظ على تميز كل دولة بكيفية إعدادها، واختلاف نكهتها .

ومما لا شك فيه أن المطبخ التركي تمازج أيضا تاريخيا، فتشتَمُّ به عبق المطابخ المختلفة التي تأثرت بها، مثل المطبخ اليوناني، والمطبخ الشركسي، والمطبخ العربي.

وتصنع الحلويات التركية بالعسل الطبيعي، والفواكهة، والمربى، ودبس التوت البري الأحمر، بطريقتها التقليدية التي كان يصنعها الأتراك قديما، بشكل يسهل تخزين الحلويات، ليسهل التنقل والترحال بها.

وتعتبر "الكنافة النابلسية" أحد أشهر الحلويات العربية التي تم إحضارها وتعديلها في تركيا، وتخرج بوصفات وإعداد مختلف تماما،  بعضها خرج مثلا من مطبخ السلطان سليمان القانوني وتعرف باسم كنافة العسل، أو جبن السكري، وتشتهر في مدن جنوب شرق تركيا.

بالإضافة إلى كنافة "البوش" التي ما زالت تطهى حتى اللحظة في المناسبات، والأعراس في مدينة كونيا،  وتسمى أيضا "كنافة الأميرة".

حيث تمكن المطبخ العثماني من إطلاق الكنافة النابلسية إلى دول آسيا المختلفة، التي لم تكن تعرف مثل هذه الحلويات واشتهرت بها، مثل جورجيا وتركستان، وأذريبجان، وتعتبر أحد أهم وأشهر الحلويات خلال شهر رمضان لمسلمي تلك الدول.
